The Mandarin Grill at the Mandarin Oriental Hotel is one of the most venerable and prestigious restaurants in Hong Kong. When asked to redesign the room as part of the 2006 refurbishment of the hotel, our challenge was to update the space without losing the character and essence of a “power dining room”.
Daylight was introduced into the room by uncovering the windows, previously obscured by large paintings by renowned Hong Kong artist Gerard Henderson. We then created a small, intimate bar area in which to display these canvases. The open kitchen and raw bar, set along one wall, allows diners to see their steak and sushi being prepared. At the end of the room a set of folding glass and timber doors permits a section of the space to be separated into a private dining area.
The finishes are simple and classic. Walls are lined with black walnut and leather panelling, while the ceiling has been designed as an array of overlapping white fans. An etched glass frieze, depicting stylised chefs and diners, runs the length of the kitchen and raw bar. The windows are dressed with white roman blinds and grey silk curtains and the original Pullman style armchairs have been restored with new loose covers, which change colour with each season. The restaurant re-opened to great acclaim in October 2006.
